Focaccia and savoury bakes

We will learn how to make the focaccia that got me my very first Hollywood handshake. We will be making some traditional piadine, a flatbread from Emilia Romagna, and Cecina, a chickpea flour flatbread ubiquitous in Tuscany and Liguria. We will then dive into the masterpiece of my hometown: tiella, a stuffed savoury pie that has fed generations of fishermen and land workers in Gaeta, and that has now become the most coveted and sophisticated family meal.

Skill level

This class is suitable for beginner with little or no experience of baking as well as more experienced bakers looking for some Italian inspiration.

What’s included

Ingredients, consumables and access to all necessary baking tools and equipment, a generous Italian lunch with wine and refreshments throughout the day. You do not need to bring anything with you other than a large container or a bag to take home some of your delicious bakes.

The chef

An engineer and researcher by trade, Giuseppe grew up in a family of passionate bakers, where food was the prime topic of conversation. He inherited from his dad, a professional chef, the love for everything cooked or baked. Winning the Great British Bake Off in 2021 sparked off his ambition to share his family gastronomic knowledge far and wide.

After contributing to the show’s cookbook “A Bake For All Seasons” in 2021, he published his own, “Giuseppe’s Italian Bakes” in 2022, which featured in Waterstones’ The Best Books of 2022: Food & Drink, and was listed in Diana Henry’s Autumn 2022 Best Cookbooks in The Telegraph.

For his second book, “Giuseppe’s Easy Bakes”, published in 2023, he focussed on quick, accessible bakes; all, of course, unapologetically Italian. Both Italian Bakes and Easy Bakes became the fastest selling new release on Amazon.

Directions: Coming down the A435 from either direction. As you reach the centre of Colesbourne, you will see a Gulf petrol station. If you are using a sat nav please make note NOT to turn down the lane by the Colesbourne Inn as this is a 'No Through Road' please turn in at Gulf Garage signposted 'To the Church' we are the large converted barn in front of you.

From Cheltenham: The petrol station will be on your left, take the turning signposted "To the church" immediately before it.

From Cirencester: The petrol station will be on your right, take the turning signposted "To the church" immediately after it. The Foodworks is in the new build barn facing you about 100 m down that road.

Important: On arrival please park in designated spaces marked signs 'Foodworks Parking' in front of building.
