Join our Head Chef for a wonderful day mastering the art of working with, and getting the most from, all the fabulous game available locally here in the Cotswolds.

Whether or not you are a hunter, Autumn and Winter brings with it a wealth of game.  Furred or feathered it must be enjoyed while it lasts, since the season is so short.

Using the very best seasonal game from our local estate we will create wonderful dishes with any additional ingredients locally sourced.

You can expect to work with:

  • Pheasant
  • Quail or partridge
  • Venison

…and a few surprise ingredients to accompany the main event.

You will be working hands-on in the preparation, cooking and presentation of the menu, and learning new skills that will further develop your culinary knowledge.

When all the preparation and cooking is complete, sit down and enjoy your dishes with a glass of complimentary wine.

Example menu:

  • Broth of quail, wild mushrooms, baby leeks and artichokes
  • Braised haunch of venison with celeriac puree, roast root vegetables and kummel cream
  • Roasted partridge with walnut mash and chicory candied onions
