INGREDIENTS:
(Serves 4)

400g x Chickpeas-with 100g of liquid
¼ x Vanilla pod-seeds scraped out and added to the sugar
110g x Caster sugar
Red food colour-optional

METHOD:

Oven on 130oC

Place the aquafaba liquid in a mixing bowl and whisk for at least 20 minutes until very stiff peaks have formed.

Add the sugar a spoonful at a time to the whipped whites and repeat until all the sugar has been added. (Add the colouring if using.)

The mix should be smooth and glossy.
6.
Spoon the mix a large spoon at a time and place onto a greaseproof lined tray, make sure they are even and with a space between them.
7.
Bake for 1 hour 30 minutes to two hours dependant on size.
8.
Then switch the oven off while leaving the meringues in the cooling oven .
